Would double strike trigger Oros, the Avenger 's ability twice, so could i pay six and deal 6 damage?

Yes. With double strike, it deals damage twice, so the ability triggers twice. As you say, you could deal three damage in this way, although you would have to pay separately (the first payment before Oros deals the second damage to the player).
