Do cards you cast with Omen Machine have to have flash?

No they do not. Omen Machine will ignore timing restrictions on cards cast using it. The only reason that you would be unable to cast something with it is if there are no valid targets or there is some other sort of specific restriction.

There is no ruling or rule that I can find addressing this, but the implication when you are told to cast something by a card is that the card text will override the normal rules functions stopping you from casting a card at that time. It also seems that if you could only cast cards which can be played at instant speed, it would cover that in the FAQ, since that would be relatively important information to know, but this is the only thing mentioned in the FAQ:

If the player is unable to put the land onto the battlefield (this is rare) or cast the spell (perhaps because there are no legal targets available) as the triggered ability of Omen Machine resolves, the card simply remains in exile

Timing restrictions based on card type are ignored. Thus, if the top card of your library is a sorcery or creature or whatever, it still gets cast.
