Can I also add +1/+1 counters to my stuff using Noble Heritage or is it only opponents that can utilize that offer?

The "each player" includes you, since you are counted as a player. It would say "each other player" or "each opponent" if you couldn't do it yourself. You however do not get Protection from yourself since that part of the effect states from your opponents.
