My opponent and I are both at 3 life life and lightning bolt each other. Who wins?

Ok so lets say my opponent and I are both at three life. My opponent casts a Lightning Bolt targeting me and in response I cast a Lightning Bolt targeting him. My Lightning Bolt of course goes on the stack above his and will resolve first. Now in the scenario we can do nothing else, no counters, no life gain, no way to prevent damage, these lightning bolts are going to resolve and are going to kill us when they do so. Now here's my question, according to my knowledge since my Lightning Bolt resolves first he will drop to zero health and in doing so when the game checks his health it will recognize that he is at zero and thus no longer a part of the game and remove his field, hand, graveyard, library, and any spells he controls from the game. Therefore I win because his Lightning Bolt disappears from the game when my Lightning Bolt kills him so it never resolves and I never take damage. Is this correct?

No. If it's just both of you, you win right at the moment states are checked and he dies, after your spell resolves. The other stuff only matters in multiplayer. He'd be dead and you wouldn't be regardless.

Correct, when a players life total reaches 0 and there are no other effects that would prevent a loss from having 0 or less life then that player immediately loses the game and all effect/permanents owned by that player are removed from the game, and if there are only 2 players in the game then that constitutes a win for the remaining player
