. A DFC (double-faced card) is front-face-up in all zones except while transformed on the battlefield. It will die as whatever face was up, but it will revert back to the default front-face state while in the graveyard. Additionally, Mimic VatMTG Card: Mimic Vat creates a token copy of the imprinted card, not the imprinted creature. DFCs always enter the battlefield front-face-up.

A double faced card has only it's front face in every zone except the battlefield. So when it goes to the graveyard and gets exiled, it's front face is the only thing Mimic Vat knows about. You would get a token that's a copy of the front face, and that token won't be able to transform.

711.2a In every zone other than the battlefield, and also on the battlefield with its front face up, a double-faced card has only the characteristics of the front face.

711.3. Except for determining whether or not a permanent can transform, a spell, ability, effect, or rule that needs information about a double-faced permanent sees only the information given by the face thats currently up

701.25a Only permanents represented by double-faced cards can transform. (See rule 711, DoubleFaced Cards.) If a spell or ability instructs a player to transform any permanent that isnt represented by a double-faced card, nothing happens.
