I was wondering if Kurkesh, Onakke Ancient could copy things like Thopter Assembly

Thopter Assembly has no activated abilities, so no, it could not copy anything from that card.

Activated abilities are abilities written as cost: effect (with a colon)

Thopter Assembly has no activated abilities, so it can never trigger Kurkesh, Onakke Ancient 's ability. That ability triggers only when you activate an activated ability of an artifact, and only if that ability is not a mana ability.

Remember that activated abilities are always written "[cost]: [effect]."
