Instants like giant growth

So I have 5 life, And a 6/6. My friend attacks with a 2/2 with deathtouch. My first impulse is to take it because it's only 2 right?? Then he casts giant growth and says he wins. Can I go back and block with My 6/6, or do I have to take it? If not then that's unfair!!

If you already declared that you don't block he wins. The combat phase consists of five steps: begining of combat where everybody can cast instants or cards with flash or activate abilities. Next step is the declare attackers step where the player whose turn it is declares wich of his creatures attack then again everybody can cast instant or spells with flash or activate abilities. Then comes the declare blockers step wich is the crucial time in your question. In the declare blockers step the defending player (in thos case you) declares how his creatures block. After that everybody has again the opportunity to cast instants or activate abilities. If your friend casts his Giant Growth now you already declared that you don't block his creature. Then we get to the combat damage step where the creature deals five damage to you. This puts at zero life so you're that. After the damage step would then come the end of combat where again everybody can cast instants or activate abilities.

Giant Growth

Blockers are declared all at once. You can't change the declaration after it has been made. However, there is a round of priority after the declaration. During this round of priority, players may cast spells and activate abilities. What your opponent did was perfectly legal.

The ability to do things like that is pretty much why instants exist and every spell is not a sorcery.
