If I tap something like Sol Ring for an item that costs 1 mana. Can I use that extra 1 mana to pay for something else later on?

Yes you can use that mana for something else. When you tap something for mana you have that much mana in your mana pool. The mana stays there until you go to your next phase.

I wanted to build on what Anneto said and provide you the specific rules:

When you generate mana, it goes to your Mana Pool, which is governed by Rule 106.4:

When an effect produces mana, that mana goes into a players mana pool. From there, it can be used to pay costs immediately, or it can stay in the players mana pool. Each players mana pool empties at the end of each step and phase.

There are 5 phases, with several of them being further broken down into steps:

1) Beginning Phase

  • Untap Step
  • Upkeep Step
  • Draw Step

2) Precombat Main Phase

3) Combat Phase

  • Begining of Combat Step
  • Declare Attackers Step
  • Declare Blockers Step
  • First Strike Combat Damage Step (if a creature with First Strike, Double Strike, or Triple Strike is in play)
  • Combat Damage Step
  • Last Strike Combat Damage Step (if a creature with Last Strike or Triple Strike is in play)
  • End of Combat Step

4) Postcombat Main Phase

5) Ending Phase

  • End Step
  • Cleanup Step

(Defined by Rules 500 through 514).

Your mana pool will empty any time one of these steps or phases ends.
