Creatures always return to their owner's graveyard.

You may only have a card another player owns on your side of the battlefield. If an effect would put a card owned by another player in any other zone you control (your hand, library, graveyard, etc.), then it goes to the equivalent zone owned by the same player who owns the card.

Therefore, if you take control of a creature and it dies, it goes to its owner's graveyard.

If they have a 'hitting the graveyard' ability like Solemn Simulacrum , the thieving player will benefit from this, before Solemn Simulacrum goes to his owner's graveyard.

It's not "before Solemn Simulacrum goes to its owner's graveyard." When Solemn Simulacrum dies, it is put into its owner's graveyard and then its ability triggers. The player who controlled Solemn Simulacrum when it died will control its on-death ability.
