I do not understand how Myrkul, Lord of Bones and Scurry Oak (or any evolve) works. Can someone help?

So, I turn Scurry Oak into an enchantment with Myrkul. I fully understand how that works.
The rest is the issue.
1st off, does Scurry Oak loose its power and toughness due to it only being an enchantment?
Next, if I play a 5/5 creature. Do I put a +1/+1 counter on Scurry Oaks (enchantment) and make a squirrel?
If it does not have a power and toughness assuming it is an enchantment, does this infinitely loop?

The evolve ability won't do anything in a case like this because Scurry Oak doesn't have any P/T to compare to. The full entry for the Evolve ability in the Magic Comprehensive Rules document includes this clarifying rule:
702.100c A creature can’t have a greater power or toughness than a noncreature permanent.
