How would Thurid, Mare of Destiny's ability work with multiple creature types

Let's say Thurid, Mare of Destiny and effect that gives creature cards I own additional types like Maskwood Nexus. I play a creature card, how many copies would I make? I feel like it just once, but I want to make sure?
Bonus question: Would Thurid, Mare of Destiny's copy ability work with creatures with changeling like Irregular Cohort? I'm under the assumption that it won't work since it is not one of the three accepted creature types until after the spell resolves.

First Question: Thurid triggers once per creature spell if that spell fulfills the binary condition of being a horse, pegasus or unicorn. Multiple of these types don't create additional triggers. It would be something else if Thurid had three seperate triggered abilities, one for each kind of horse.
Second one: Changelings are all creature types at all times, so Thurid definitely triggers off of you casting a changeling.
