how does Solemn Offering work

i asked a similar question before but did not word it correctly. what i meant to ask was do i need to destroy an artifact or enchantment to gain health?

Note that if you cast Solemn Offering with a legal target, but that target is removed from the battlefield before Solemn Offering resolves, the spell will 'fizzle' because it has no legal targets and you will not gain life.

You need to have a valid target in order to cast the spell and that target has to be valid when the spell resolves.
If there are no targets you can't even cast the spell, you just have to hold onto it in your hand
If the target gets hexproof, or protection from white, the entire spell will fizzle, and you will gain no life.
One point of interest, the spell doesn't necessarily have to actually destroy the artifact/enchantment in question in order for you to gain life.
For instance, if you targeted a Darksteel Relic
with your Solemn Offering
, the relic would not be destroyed, but you would still gain the life.

and in case you were wondering, you don't get to choose whether or not it actually destroys the enchantment or artifact. Unless there's some other effect stopping the object from being destroyed, you have to destroy it.

In order to cast a spell, you must be able to choose a legal target for the spell. If there are no artifacts or enchantments on the battlefield, then you cannot cast Solemn Offering .
So, to answer your question no you would not gain life because you cannot cast it.
