Guardian of the Gateless

If Guardian of the Gateless was going to block three creatures, which makes it a +6/+6 creature, and the first did three damage and died, does that damage stay with it to the next creature? would the next two only have to do three more damage to destroy it or does it regain its health in between creatures? I wouldn't think it would regain it's life in between characters.

Two things:
1. Damage marked on a creature remains on that creature until the end of the turn.
2. All creatures in a combat damage step deal combat damage simultaneously.
Your Guardian of the Gateless will deal 6 damage total to the attacking creatures, and it will simultaneously be dealt the combat damage from all three creatures. Those creatures need to deal a total of 6 damage to Guardian of the Gateless to destroy it.

so, say I was using my squirrel deck and I had 19 +19/+19 squirrels. (I did have that happen once) How would that work?

Assuming Guardian of the Gateless blocks all 19 Squirrels, it would be a 22/22 by the time damage is assigned. You would need to deal 22 points of damage to the Guardian of the Gateless to destroy it, but none of the damage would go through to the defending player unless your Squirrels also had trample.

You're right to think that it doesn't heal between creatures.
The way to sort out damage for one blocker on multiple attackers is very similar to the case of one attacker getting multiple blockers. When the block is declared, the defending player decides on a damage assignment order for Guardian of the Gateless vs. the creatures it's blocking. When combat damage is assigned and dealt, all those creatures deal damage to the Guardian and the Guardian assigns and deals damage according to the assignment order decided earlier. Combat damage is dealt simultaneously, not sequentially (unless one or more of the creatures has first strike or double strike).
