Gilt-Leaf Archdruid

With Gilt-Leaf Archdruid 's ability am I able to tap six elves then.. untap one with say Seeker of Skybreak 's ability would the untapping of the elf ruin Archdruid's ability? or would it then trigger it once I tapped the elf a second time?

This is the rules quote dictating how paying costs for spells and activated abilities is handled:
601.2g The player pays the total cost in any order. Partial payments are not allowed. Unpayable costs can't be paid.
Since you must tap seven untapped Druids you control to activate Gilt-Leaf Archdruid 's ability, you may not tap them separately. Also, when casting a spell or activating an ability, you must do so completely before you can further cast/activate.
Gilt-Leaf Archdruid's ability is not a triggered ability and therefore can never "trigger." If it were a triggered ability, it would be worded like so: "Whenever a Druid you control becomes tapped, if it was the seventh Druid tapped this turn..."

When you pay a cost, you have to pay the whole thing all at once, and the only abilities you're allowed to activate while paying a cost are mana abilities (Seeker of Skybreak doesn't have any). You have to tap 7 untapped Druids all at the same time to activate Gilt-Leaf Archdruid 's ability, and if you don't have 7 untapped Druids, you can't do it at all.
