equipment vs instant

if my opponent casts and instant can i equip in response and have my equipment attach before the instant resolves assuming this is all taking place in my main phase

No. Activating the Equip ability of equipment is a sorcery-speed effect, and you may only do instant-speed things while there is an ability on the stack waiting to resolve.

No. Equip abilities may only be activated at sorcery speed (during your main phase while you have priority and the stack is empty).

702.6a Equip is an activated ability of Equipment cards. "Equip [cost]" means "[Cost]: Attach this permanent to target creature you control. Activate this ability only any time you could cast a sorcery."

Unless you have an equipment like Cranial PlatingMTG Card: Cranial Plating, you can't equip a creature in response to a spell, like Epochalyptik said

That means that you can activate it as a sorcery. Sorcery cards can't be activated as a response.

Using Cranial PlatingMTG Card: Cranial Plating's BB ability is not an Equip ability, just a regular activated ability, so you still can't equip anything in response.
