Doomed Traveler

I have 1 life left and my opponent attacks with 2 1/1's. I have a Doomed Traveler . Can I block the first 1/1 with the Doomed Traveler , get the spirit token and block the second 1/1 with the spirit?

No. You declare blockers simultaneously, so you can't block with a creature that doesn't exist yet.

No. All combat is done at the same time, and there is only one point in which you declare blockers.

Combat:

Declare attackers

~instants can be played~

Declare blockers

~instants can be played~

Damage

~instants can be played~

End combat

After you declare your Doomed Traveler as a blocker and move onto the damage step, you can't back up to the declare blockers. Even if you somehow could, your Doomed Traveler would have to block a first striker in order to save yourself. The two creatures your opponents have will deal damage at the same time. So before your Doomed Traveler 's ability activates (giving you a spirit) you would already have taken the 1 damage.
