Does sacrificing a creature with Fling trigger Wild Defiance?

Does sacrificing a creature with FlingMTG Card: Fling trigger Wild DefianceMTG Card: Wild Defiance?

I don't believe it does. FlingMTG Card: Fling reads "sacrifice a creature", so there is no target.

The only thing FlingMTG Card: Fling targets is the player or creature you're damaging, so no it wouldn't.

Zarum is right. The "Target" for FlingMTG Card: Fling is any creature or player. So you could sacrifice one of your creatures, and then target any of your other creatures which would then trigger Wild DefianceMTG Card: Wild Defiance. So obviously sacrificing a 1/1 token, or something small like that, would make the most sense if you wanted to do something like that.

On a more general note. An object is only the "target" of a spell or ability if it specifically says "target." The exception to this being casting Auras and equip abilities which also target.

For reference. Even if the creature WAS targeted by FlingMTG Card: Fling and it MIGHT trigger Wild DefianceMTG Card: Wild Defiance it would not work. You have to sacrifice the creature to put FlingMTG Card: Fling on the stack meaning that by the time that Wild DefianceMTG Card: Wild Defiance's ability goes on the stack the creature is already dead.

And no matter how big a creature is, it will always go to the graveyard if you sacrifice it.
