Hey, at least the rest of your creatures get through!

This is a confusing point for a lot of Magic newbies. In Magic, you attack the player, not their creatures (like you would in a game like YuGiOh). The defending player then gets to choose how to block using his own creatures.
Any number of defending creatures can gang up on one attacker. This is often the only way to get rid of a powerful creature. One defender, however, may not block more than one creature at a time.
To put it in perspective, if a bully starts attacking you and your three friends, you will all fight back and gang up on him, giving you the advantage. If four bullies start attacking you while you're alone, however, you'll really only be able to try to stop one of them at a time.
That's the analogy I used to try to teach my GF how to attack and block. Hope it helps you out here.

"One defender, however, may not block more than one creature at a time."
This is not entirely true. Creatures such as Avatar of Hope ignore the rule of a creature only being able to block a single creature. There are a number of other creatures which are an example of this.

those are exceptions. kind of like you cant cast cards from exile but you can cast Misthollow Griffin from exile. it's a world effect so if a card says it that's just that card.
and they're not called monsters

You can use any number of creatures to block a single creature. The attacking player may then choose how their creature's combat damage is distributed among the blocking creatures.
