How exactly does Craterhoof BehemothMTG Card: Craterhoof Behemoth react with the rest of the board? Does he give himself the buff? Does he count as one of the creatures?

Yes he does count towards your number of creatures on the battlefield and he also gets the buff.

Creatures you control are the ones on your side of the battlefield, and for his ability to trigger, he must be on the battlefield.

If he wouldn't buffed himself, his enter the battlefield ability would have been worded differently (something along these lines : OTHER creatures you control gets +X/+X and trample until end of turn)

The underlying principle here being that "When ~ enters the battlefield..." abilities trigger after their source is already on the battlefield, meaning that they may count their sources, if relevant.
