Can you be forced to sacrifice a God?

If you get targeted by, for example, Devour Flesh and a God is the only thing in play, can or must it be sacrificed?

Well that depends. Let's take a look at Erebos, God of the Dead for reference. The text on the gods reads that if your devotion to their color is 5 or more, they're a creature. This is essentially saying that if your devotion is lower than 5, the god is just a Legendary Enchantment.

So to answer your question, yes if your devotion is high enough, no if it's not.
