Can Elspeth, Sun's Champion ultimate be stacked on top of another?

In a previous match-up that I had, I was able to trigger Elspeth's ultimate twice. Does this mean that creatures I control gain flying and +4/+4? Or do I just get that one emblem?

You can absolutely have more than one emblem. I once had a game where (control mirror, uggh) Elspeth was ultimated 6 times throughout the course of the game.

There is no limit to the number of emblems you may have (including multiple copies of the same emblem), so from a practical perspective having two Sun's Champion emblems would indeed give your creatures +4/+4 and flying.

As a side note, it would also make me recommend against ever using her -3. :)
