If my opponent plays, say, Temple of Enlightenment, can I change the colors it produces? Or, because they are not "words", can I not change the symbol. My assumption here is no.

This seems to be a mind-bending card for you :)
The only thing you're allowed to change is color words and basic land types. You can't change proper nouns, and you can't change symbols (things were probably different if color symbols were placeholders for colors, which they aren't - they're placeholders for colored mana).
