I know you can cast Risen Executioner from your graveyard, but it doesn't say you can cast it as a sorcery or as an instant. So my question is, can you cast Risen Executioner as a sorcery or as an instant from your graveyard?

You may only cast a card from anywhere however you would in your hand. So, Short answer: Sorcery.

Cards do only what they say they do. Risen Executioner's ability defines an additional zone from which you may cast Risen Executioner, but it doesn't day anything about the times at which you may cast it. Therefore, you may only cast it at any time at which you could normally cast it (i.e., at sorcery speed).
