What happens if you have two creatures on the field with Pariah attached to them?

Because both instances of Pariah have a replacement effect that would apply to the same event (damage that would be dealt to you), you choose the order in which they apply. The first replacement effect you apply will redirect the damage from you to the relevant creature. The second replacement effect will then be unable to apply to the event because the damage would no longer be dealt to you.

tl;dr: You choose the creature to which the damage is redirected.
