I was playing a game, wich this guy have one 30/15 trample creature atacking me.I put my Loyal Sentry to block it.On my perspective, at the blocking phase, both creatures are destroyed and the damage step begings with no dmg to be puted on the stack. But I'm not sure...Can you guys tell me what happen?

Loyal sentry's ability is a triggered ability. When you assign it to block, the trigger goes on the stack at the next available opportunity, which is after the declares blockers step. Once all blockers have been declared there is a period where you can cast spells before the damage step. It is here where the triggered ability will go on the stack and then resolve. So yes both creatures are destroyed prior to damage.

Also, you should be aware that damage does not use the stack.

Them, I was safe to avoid the damage? Or, even after destroy, the damage will be caused?

You would be fine. Creatures don't deal damage until the actual damage step. Both creatures were removed from combat prior to that point and thus are not able to deal damage.
