Can It That Betrays Steal From the Library or Hand?

Say I have Wheel of Sun and Moon in play and my opponent attacks me with It That Betrays so I sacrifice a Ajani's Pridemate. Due to Wheel of Sun and Moon’s replacement effect I put Ajani's Pridemate on the bottom of my library.

I assume It That Betrays would still track the pridemate since it did not change zones from the graveyard to the library but went straight to the library. However it feels a bit odd to have a creature recurred from the bottom of your library.

Assuming it works would it also apply if Ajani's Pridemate went to my hand instead (by some sort of replacement effect)?

You're mostly right here. It That Betrays will track the card to the library and attempt to return it to the battlefield from there, but it will not be able to. The reason is that the library is a hidden zone, so an effect can only find a card there if it searches or if it reveals the card first. See Rule 603.6 for more details.
