If someone declares an attacker and I use a removal or bounce spell, does the damage still go through?

If I declare an attack with let's say a 5/5 and they block with a 2/2, if I use a removal or bounce spell, does the 5 still go through to the player?

No. Once an attacking creature is blocked, it remains blocked for the rest of combat. Even if you remove the blocker, it won't deal damage to the defending player or planeswalker unless it has trample.
