Does Veiled Sentry die like a regular creature?

Ok, so let's say I attack and defending player defends with Veiled Sentry and I kill it, does it turn back into an enchantment and remain on the field or does it go into the graveyard?

It dies and goes to the graveyard as a creature, then returns to being a 1-mana blue enchantment in the graveyard

Whenever a permanent changes to another type it's subject to all the normal rules pertaining to that new type. If a non-creature permanent becomes a creature and is destroyed, has lethal damage assigned to it, etc then it is put into the graveyard, unless it specifically said otherwise.
