vesuvian doppelganger and legendary creatures?

If you have a legendary creature on your side of the field and then to play a doppelganger, if you copy the legendary creature, do you have to destroy the original copy?

The legendary rule cares about names, so as long as the copy copies the name (which is a copyable value), it will be subject to the legendary rule. This is the case for the Vesuvan Doppelganger.
Note that nothing gets destroyed, though. When two legendary permanents share the same name, you have to choose one and put it into your graveyard. If it were destroyed, Indestructible would keep creatures from being put into the graveyard this way. On that note, it's also not sacrificing, so it won't trigger abilities that trigger whenever you sacrifice a creature. It will, however, trigger abilities that trigger when a creature dies, as that just requires the creature to go from the battlefield to the graveyard.
