unblockable,instant

can i wait until someone chooses blockers and use an instant to make them unblockable. i was told no because of it being blocking phase i give up that right. if so then why are they instant spells and abilities and not sorceries.

I think your definitions may be confused.

An instant is a card or copy of a card with the type "instant." Instants may be cast at any time you have priority.

A sorcery is a card or copy of a card with the type "sorcery." Sorceries may only be cast during your turn on a main phase while the stack is empty.

Abilities are triggered or activated effects written on permanents. Activated abilities, unless otherwise stated, may be activated at instant speed.

When a creature is blocked, it remains blocked for the rest of combat unless an effect specifically causes it to become unblocked. Giving a blocked creature evasion or removing its blocker will not cause that creature to become unblocked. Your last chance to cast instants or activate instant-speed abilities is during the end of the Declare Attackers step, before your opponent begins to declare blockers. Your last chance to cast sorceries is your precombat main phase.

Sort of a related topic, but different question regarding combat and instants....not sure if I should create a new question for it or not, but....

Does my opponent get to respond to me choosing my attackers? For instance, I declare attack phase, no response, then I tap the creatures I am actually wanting to swing with and my opponent attempts to respond by using something like a card:Gideon's Lawkeeper to tap one of the creatures I already tapped to attack with. Does this work? Or does he need to tap my creature before combat or after I enter combat phase but before I declare my attackers?

No it does not work like that. He can't tap your creature in response to you declaring it as an attacker as long as you give him a chance to tap them once you have declared that you are beginning your combat phase.
