but it does say, destroy target creature blocking or blocked by, does that not mean it has to be assigned as a blocker first?

declare attackers
Priority Passed
Declare Blockers
Priority Passed (blockers are declared and creatures with blockers assigned to them are considered blocked or blocking)Combat step (this is where damage is done/assigned, if a creature does not make it to this step it does not do damage)

so just cause i'm an total retard, can i block a trample creature with Cromat, and kill it with the first abillity without getting damaged?

As long as you activate Cromat's ability between the declare blockers step and the combat step then the 6/6 would die before doing any damage to you or Cromat
