Pollenbright Wings cast on opponent's creature?

If I slap a Pollenbright Wings on an opponent's creature and they deal combat damage to another player, do I get the tokens since I control the enchantment?

Yes. Since you control the source of the ability (and therefore the ability itself), you will get the tokens. If the controller of the creature is the one to get the tokens, the ability would specify that.
