Does Painter's Servant have any effect on what color lands can tap for given that the lands now have a color identity of (insert color here)?

First, color identity is only used in the Commander format and only for deck construction. It has no impact on gameplay.
Second. changing a land's color (or giving it a color) will not change its abilities. The color of mana produced by mana abilities is not based on the color of those lands. Changing an object's color does not change its abilities.
