Is it Breaking Any Rules?

Would keeping a deck list on me and referencing it when I sideboard during games be breaking any rules. I find it easier to figure out what I can drop when I have a clear list of cards in front of me just like I find editing decks to be easier on paper.

So no, you cannot have the decklist on you at all times, as that would be considered a note, and you cannot reference notes from outside the current match, or between matches, within the game you are currently playing. But you can request to have your decklist provided to you between each match of the game.

Correct. As it is between matches, you have the right to do so.
However, it might get tedious and annoying for the employees/volunteers to have to repeatedly bring you your decklist and it could be considered rude or stalling by some people if they are busy and you end up waiting for them to bring it to you.
I would suggest you just learn and memorize your deck, so you don't have to worry about things like this.

I've memorized my deck (I've been playing it for over a year now) but it just helps as a visual thing.

How can a paper with a decklist on it be more of a visual than the deck itself?

The deck list has everything in an orderly fashion where as the deck itself is jumbled together. Checking the list is faster than sorting the entire deck out then spending five minutes reshuffling because I had it sorted. It's simply how my brain works.

Yes, you are allowed to keep a short list of pre-written notes and refer to them in between games of a match. A decklist and simple sideboarding notes would be acceptable. From the MTR (Section 2.11, "Taking Notes"):
Between games, players may refer to a brief set of notes made before the match. They are not required to reveal these notes to their opponents. These notes must be removed from the play area before the beginning of the next game. Excessive quantities of notes (more than a sheet or two) are not allowed and may be penalized as slow play.
Keep in mind that any notes you make during a particular match can only be referenced during that match.

According to the tournament rules in section 2.7; Deck Registration:
Players have the right to request to see their decklist between matches. Such a request will be honored if logistically possible.
