can i activate her ability 3 times off 1 attack?

Intet, the DreamerMTG Card: Intet, the Dreamer has a triggered ability, not an activated ability. Triggered abilities are easy to identify because they usually begin with the words when or whenever, phrases used to denote a trigger event that must occur for the ability to work.

Whenever Intet deals combat damage to a player, its triggered ability goes onto the stack. When the ability resolves, you are prompted to make an optional payment. If you do, then the rest of the effect happens. If you don't, then the effect is finished resolving. You may not make the payment more than once.

Double Strike would possibly allow you to use the ability twice a turn, as a creature with Double Strike deals two separate instances of damage to your opponent. For each of them, the ability triggers and you may pay the additional cost.
