if I assigned Abuna Acolyte as a blocker, can I tap him to use his ability AFTER he is being assigned as a blocker BEFORE combat damage is dealt to prevent 1 damage to me ?

yes you can.

As long as you tap it after being declared a blocker the creature will stay a blocker and deal damage.

309.2e Each chosen creature becomes a blocking creature, but only if its controlled by the defending player. Each one is blocking the attacking creature chosen for it. It remains a blocking creature until its removed from combat or the combat phase ends, whichever comes first. See rule 306.4.

You can indeed. Creatures need to be untapped to block, but once you've declared them as a blocker becoming tapped doesn't change the fact that the creature is blocking.
