how does trample work with Phytohydra?

If Phytohydra blocks say, a creature with trample that's 8/8 when it's 1/1.

Does it gain one +1/+1 counter, and 7 damage tramples over, or does it gain 8 +1/+1 counters and no damage tramples over?

one +1/+1 counter, and 7 trampled over. it can only take as much damage as its toughness, therefor only that much can be prevented.

Gains 1 +1/+1 counter,7 trample damage to you and it becomes 2/2. Trample damage is combat damage that the attacking player can choose to deal to defending player or planeswalker after the defending creature(s) have been dealt lethal damage. In this case, the 1/1 Phytohydra will only take 1 damage since 1 damage is lethal to it at that point of time. The remaining 7 damage will get trampled over to you.

702.17b The controller of an attacking creature with trample first assigns damage to the creature(s) blocking it. Once all those blocking creatures are assigned lethal damage, any remaining damage is assigned as its controller chooses among those blocking creatures and the player or planeswalker the creature is attacking. When checking for assigned lethal damage, take into account damage already marked on the creature and damage from other creatures thats being assigned during the same combat damage step, but not any abilities or effects that might change the amount of damage thats actually dealt. The attacking creatures controller need not assign lethal damage to all those blocking creatures but in that case cant assign any damage to the player or planeswalker its attacking.Example: A 2/2 creature with an ability that enables it to block multiple attackers blocks two attackers: a 1/1 with no abilities a 3/3 with trample. The active player could assign 1 damage from the first attacker and 1 damage from the second to the blocking creature, and 2 damage to the defending player from the creature with trample.Example: A 6/6 green creature with trample is blocked by a 2/2 creature with protection from green. The attacking creatures controller must assign at least 2 damage to the blocker, even though that damage will be prevented by the blockers protection ability. The attacking creatures controller can divide the rest of the damage as he or she chooses between the blocking creature and the defending player.

This states that you must assign lethal damage to the Phytohydra then all the other damage goes to the face. Because Phytohydra 's effect doesn't happen until damage occurs, your opponent needs to just assign 1 damage to be considered lethal damage, then they may assign the other 7 damage to you. The Hydra's effect sees 1 damage and converts that damage to 1 +1/+1 counter.
