Does extort give me life equal to the TOTAL life lost by my opponents?

If I cast a spell and extort it in a multiplayer game, would Bob and Tom each lose 1 life and I gain 2 life? or would I just gain the one?

Yup, you gain life equal to the life lost by your opponents, plural.

Basilica Screecher says each opponent loses 1 life and you gain that much life, referring to the total life lost by your opponents (due to the extort).

Yes it works that way. You can only gain as much life as was lost. If you have multiple instances of Extort trigger, each one is handled separately, so if the first instance killed Tom, the second instance would only gain 1 life from Bob.

Reminder text on a card (the italicized parenthetical text) tries to give a concise explanation, and sometimes uses a few shortcuts to get the meaning across without using too many words. "That much life" in the reminder text of Extort means "an amount of life equal to the total amount your opponents lost". In your example you gain 2 life.
