Colour change deck

So im building a casual colour change deck and here is my question.

I cast Llawan, Cephalid Empress and while he si on the stack I cast Alter Reality changing blue into what my opponent plays.

Now lets assume my opponent plays a mono red deck.

I change blue into red. Does that mean that except taking all red creatures to his hand, he wont be able to play red creatures any more?

You cannot target Llawan while she is on the stack, but you can target her when her ETB effect is on the stack, and her text then changes to:

When ~ enters the battlefield, return all red creatures you don't control to their owners hand. Your opponents can't play red creature spells.

So, you are absolutely correct.

You can target Llawan, Cephalid Empress with Alter Reality while she's on the stack. Alter Reality specifically says it can target a permanent or a spell. Anything that changes the characteristics of a permanent spell while it's on the stack will also affect the characteristics of the permanent it becomes when it gets to the battlefield. This means when Llawan enters the battlefield she will say (in your example):

When Llawan, Cephalid Empress enters the battlefield, return all red creatures your opponents control to their owners' hands.
Your opponents can't cast red creature spells.

Alter Reality does allow you to change the text of spells as well, and you would have to because once Llawan, Cephalid Empress enters the battlefield her triggered ability is independent of her and will only hit blue creatures.

603.3 Once an ability has triggered, its controller puts it on the stack as an object thats not a card the next time a player would receive priority. See rule 116, Timing and Priority. The ability becomes the topmost object on the stack. It has the text of the ability that created it, and no other characteristics. It remains on the stack until its countered, it resolves, a rule causes it to be removed from the stack, or an effect moves it elsewhere.

FancyTuesday, Alter Reality says ALL INSTANCES of one colour with another. that's what I am not sure about

All means all. It will change both instances of "blue" to "red" in your example.

Yes, it changes all instances of one "color word." So, if you hit Llawan, Cephalid Empress with Alter Reality as a spell it bounces all red creatures you don't control to their owners hands and they can't cast red creature spells. If you hit Llawan after it comes into play as a permanent it will bounce all blue creatures you don't control and your opponents wouldn't be able to cast red creature spells.

That's the only distinction I was making, to explain why it mattered that it be targeted as a spell, the way you described in the question.
