Can I use Rolling Stones to attack with Defender creatures.

I'm currently making a defender deck, but was unsure about what all cards are affected by Rolling StonesMTG Card: Rolling Stones.

Does the defender card have to explicitly say "wall" or does defender count as a wall?

Whenever you have a question about a card's text, the first proactive step in finding an answer is to check its Oracle text (the updated text that WotC releases to make sure cards function as intended).

Rolling StonesMTG Card: Rolling Stones has the following Oracle text: "Wall creatures can attack as though they didn't have defender."

This means that Rolling Stones allows creatures with the subtype Wall to attack regardless of whether or not they have defender. It does not affect non-Wall defenders and Walls that don't have defender.

The current Oracle text of Rolling StonesMTG Card: Rolling Stones is "Wall creatures can attack as though they didn't have defender." If a creature with the defender ability doesn't also have the Wall creature type, then Rolling StonesMTG Card: Rolling Stones doesn't allow it to attack.
