Can i use pursuit of knowledge second ability twice or more?

Pursuit of Knowledge has a first ability that allows counters to be placed on it by skipping draws and the second ability requires 3 counters to be removed(to draw seven cards and sacrifice pursuit). However more than 3 counters can be placed on pursuit. could i activate the second ability multiple times before pursuitit sacrifices itself(by say removing 6 counters)?

No. Activated abilities are written as "Cost:Effect". Anything that happens in the "cost" part cannot be responded to or interacted with.

Sacrificing Pursuit of Knowledge is part of the cost and must be done in order to activate the ability. By the time you get priority and the chance to be able to activate it again, it is already in your graveyard.
