attacking and tapping

Is it possible to attack with a mana dork or some othr creature with a tap ability and be able to tap it?
For instance:
I attack with an card:Avacyn's Pilgrim.
Blockers are declared.
Can I then tap him for mana and he will stay in combat?If yes, then is it possible to do this with other tap abilities such as the original Niv-Mizzet?

@Chubbub: The second half of your answer is wrong.
A creature without vigilance must tap to attack. You can't respond to this tap. In this case, you can either attack with card:Avacyn's Pilgrim or tap it for mana. A creature that could do both is Steward of Valeron , which has vigilance.
Tapping or untapping an attacking creature does not remove it from combat. Only effects that specifically remove a creature from combat will do so.

No, because he needs to be tapped to attack. If he had vigilance, and you tapped him he would be removed from combat.
