Creatures you own attacking you.

Upon an attack being declared and phase swapping to declaration of defenders, I have priority as I'm defending, If I were to gain control of the attacking creature would it still attack me?

No or at least that's what i would assume would happen as long as you gain control before the damage step the creatures are no longer considered attacking you

No, If you control it, you can declare that creature as a blocker. It stops attacking you at the moment you gain control of it.

No. The creature is removed from combat if your opponent loses control of it.

You should note that the first thing that happens during the declare blockers step is the defending player declares blockers and blocks as a turn-based action that doesn't use the stack. No player has priority. Then, after blocks are declared, the active player (the player who's attacking) gets priority first.

As everyone else said, a creature is removed from combat if its controller changes.

Wait, is the creature removed from combat? Or is it just removed from attacking?

Note that gaining control of a creature does not change its orientation... whether it is tapped or not. While most red control spells specify that the creature is untapped and gains haste, some blue spells merely gain control of the creature. They do not untap it. Thus it can't be declared as a blocker.

The creature is removed from combat, but if you gain control of it before the declare blockers step, you can declare it as a blocker. "Removed from combat" is not equivalent to "can't attack or block this combat."
