Can I specify a supertype when choosing a card type?

Hey, so in the card card:Martyr's Bond, can i specify the supertype "Legendary" as apart of the card type? So for example, my legendary creature is put into the graveyard, will card:Martyr's Bond trigger as a "Legendary Creature" instead of a "creature."

No, because Legendary isn't a card type, it's a supertype. The card types are artifact, creature, enchantment, instant, land, phenomenon, plane, planeswalker, scheme, sorcery, tribal, and vanguard. The only types that are relevant for card:Martyr's Bond are artifact, creature, enchantment, planeswalker, and tribal.

You don't specify what card type is affected. It's dependent on the permanent that goes to the graveyard.
However, if a Legendary Creature under your control goes to the graveyard, then each opponent would have to sacrifice either a Legendary or a Creature card.
From the Gatherer entry:
Each opponent must sacrifice only one permanent for each trigger, even if the nonland permanent you controlled that went to the graveyard had multiple types. For example, if an artifact creature you control is put into a graveyard from the battlefield, each opponent sacrifices exactly one artifact or creature, and that permanent doesn't need to be an artifact creature.
