Double Strike Excess Damage

If a creature with double strike(3/3) is blocked by a 1/1 creature, will the second strike damage the blocking player?

no. the only time you assign damage past a blocking creature is if it has trample. so a 20/20 double strike creature couldn't do any damage to the other player if blocked by a 1/1.

Its called chump blocking.

GLBoxingGlove is correct. Once a creature is blocked, it's blocked, no matter what happens to the blocking creature. If you declare a creature as a blocker, but then sacrifice it to something before damage is dealt, then even the creature's normal damage doesn't go through.

No, in the example, the 3/3 deals no damage to the player.

if the 3/3 creature has Trample then the extra damage could "trample over" anyway. But without trample, even if the blocked creature has double-strike and finishes off the blocker in the "first strike" damage step, it is still considered blocked and cannot normally damage the player.

If the creature doesn't have trample it will follow the ordinary rules of combat damage. The relevant piece is reproduced here:

510.1c A blocked creature assigns its combat damage to the creatures blocking it. If no creatures are currently blocking it (if, for example, they were destroyed or removed from combat), it assigns no combat damage. ...

In this example, no creatures are currently blocking the double strike guy because they got killed during first strike damage. However, double strike guy is still a "blocked" creature.

If the creature does have trample, then this rule applies, and the extra damage is dealt to the player:

702.17c If an attacking creature with trample is blocked, but there are no creatures blocking it when damage is assigned, all its damage is assigned to the player or planeswalker its attacking.

if it has lifelink, does it gain life even if it kills the blocker in the first strike damage step. I think it doesn't.

Select is correct. It'll gain you life equal to its power in the first combat damage step, and in the second one, there's no blocker to do damage to so it doesn't deal any damage.
