If you sac Judge's Familiar making your opponent play +1 colorless to resolve the spell, can this be done with multiple Judge's Familiar to increase the cost?

Yes, if you do it 3 times. Your opponent will have to pay 1 mana each time or it is countered.
Obviously wait for them to respond to each before saccing the next
