Would I still gain life if I run out of valid cards?

If I play a land like Riveteers Overlook and I don’t have the valid lands in my library (most likely because they all on the battlefield, hand and/or graveyard) do I just shuffle and gain the one life?

You still gain the life if you fail to find the land, yup.
And, though niche, you have the option of 'failing to find' even if you have a land of that type in your library, but don't want to fetch it for some reason. You'd still search your library and you'd still gain 1 life.
