If I have wild-defiance and Grizzly BearsMTG Card: Grizzly Bears on the battlefield, and my opponent casts a Lightning BoltMTG Card: Lightning Bolt targeting the Grizzly BearsMTG Card: Grizzly Bears, the +3/+3 is applied at the time of the targeting and then the 3 damage is dealt upon resolution of the Lightning BoltMTG Card: Lightning Bolt, correct?

Yes, Lightning BoltMTG Card: Lightning Bolt will go on the stack and trigger Wild Defiance. The +3/+3 will then go on the top of the stack and as the stack resolves backwards will give your Grizzly BearsMTG Card: Grizzly Bears +3/+3 before the damage resolves.
