What is the Shapeshifter's Power and toughness when not on the battlefield?

From what my own research on this creatures with stars (*) as their power/toughness are always the power and toughness listed in their text box regardless of where they are. But, shapeshifter must enter the battlefield in order for you to pick a power and toughness for it. So what would it's power/toughness be if I discarded it or I was searching for it in my deck with a tutor like Imperial Recruiter prior to having played it. Also would playing it and picking a number for it and then having it die/get shuffled cause the dead shapeshifter to keep that power/toughness in the graveyard? And if so, then would that change apply to all my shapeshifters in my deck/graveyard or just that one? Essentially I am very confused by this card.

If there is no number chosen the game uses 0 instead. Since there is only a number chosen when Shapeshifter is on the battlefield, it is a 0/7 in all other zones.

107.2. If anything needs to use a number that can’t be determined, either as a result or in a calculation, it uses 0 instead.
