What happens if I use Animate Dead on a creature with mantle?

Sorry, I do not have any example of a creature with mantle.

Does the creature dies, after Animate Dead resolves?

Could you explain what you mean by mantle? There's too many things that could refer to without some explanation: Nim Deathmantle, Paradise Mantle, Umbral Mantle all come to mind.

Perhaps you mean shroud? As on... Algae Gharial? Nothing remarkable happens. Animate Dead targets the creature in the graveyard, where shroud does not function; it only matters on the battlefield. Once the creature is on the battlefield and Animate Dead is attached, it doesn't matter if the creature has shroud, it's not an active target of a spell anymore.

Exaclty. I meant Shroud, sorry.

Just like Algae Gharial. So it wouldn't be necessary to sacrifice it after it resolved?

Yes you'd be fine. You wouldn't have to sacrifice it.

Shroud only prevents targetting; the aura is already attached by the time shroud is online. The aura targets a creature card in a graveyard when it is cast, it does not target a creature on the battlefield, so shroud never prevents Animate Dead from functioning (or its brothers Necromancy and Dance of the Dead). If you look at the official wording of Necromancy on Gatherer you can even see they changed it from the original card to make this more clear by removing references to "target" in the latter half of the effect.

If the creature had protection from black, like Auriok Champion, Animate Dead would fall off and you'd have to sacrifice her. This is probably the scenario you have confused shroud for. The play works like this because protection makes enchanting/equipping not possible, but likewise only functions on the battlefield, so she was a legal target while in your graveyard.
